Double Chocolate Chip Cookies (Vegan + GF)

Do you love chocolate and nut butters? If so this dessert is perfect for you! It is free of refined sugars and can be made vegan by using a flax egg instead of a regular egg, making it an ideal treat to share with anyone.


Ingredients:

  • 2/3 cup nut butter (almond butter works great)

  • flax egg (1 tbsp ground flax seeds + 2.5 tbsp water and let sit for 5 minutes)

  • pinch of salt

  • 1/2 cup coconut sugar

  • 1/2 tsp baking soda

  • 1/3 cup cocoa powder

  • 1/2 cup chocolate chips (Enjoy Life is dairy free)

Instructions:

  1. Preheat oven to 350 degrees and line baking sheet with parchment paper.

  2. Sift cocoa powder, baking soda, salt and coconut sugar into a bowl.

  3. Add in the nut butter, flax egg, and about 2/3 of the chocolate chips. Mix well.

  4. Roll into small balls (about 12-14 cookies) and place on baking sheet.

  5. Sprinkle remaining chocolate chips on top of the cookies.

  6. Bake for 7-10 minutes, they will get firmer once you take them out.

  7. Let cool and enjoy!
